Tomato Soup

 
A very simple soup that can be base to add more ingredients.

Cooking Ingredients:
55g butter
1 Onion, chopped
700g tomatoes, chopped
600ml hot vagetable or chicken stock
pinch of sugar
100ml Single cream
2 tbsp chopped basil leaves
1 tbsp chopped parsley
Salt and pepper


Cooking Method:
1) Melt half the butter in a large saucepan. Add the onion and cook over a low heat for about 5 minutes until softened. Add the tomatoes and season to taste with salt and pepper and cook for minutes.
2) Pour in the stock and return to boil. At the point of boil reduce heat and cook for 10 minutes.
3) Take the saucaepan of the heat and cool slightely. If you have a hand blender then blitz the soup up and then pour the soup through a sieve into a new saucepan so that will remove any seeds and tomato skin. return to medium heat and add single cream and remaining butter, basil and parsley. Do not let it boil. Once warmed server imediately.
