Spanish Soup

This soup will warm you up on a winters day. Cooking Tips:
Serves:4 Cook Time:25 minutes

Cooking Ingredients: 1. 1 onion sliced
2. 4 Garlic Cloves, crushed
3. 1 Large Potato
4. 1 Can 400g Chopped Tomatoes
5. 1 tsp Hot Paprika
6. 1 tsp Thyme
7. 750ml Vegetable Stock
salt and pepper
Cooking Method: 1. Add oil, onions,garlic,sliced potato and paprika to a medium heat saucepan. Leave this for 5 minutes not letting the onions brown.
2. Add chopped tomatoes,thyme and vegetable stock and simmer for about 25 minutes.
3. Optional *Once the potatoes are soft with teh back of a fork break up some the potatoes to make the soup thicker if you wish.
4. Serve with some crusty bread and enjoy.
