Red Pepper Soup

Cooking Ingredients:
225g red peppers, deseeded and diced
1 onion, sliced
2 garlic cloves, crushed
1 fresh green chilli
300ml passata
600ml vegetable stock
2 tbsp chopped basil


Cooking Method:
1) Put red peppers into a saucepan with onion garlic and chilli and place on medium heat. After 3 minutes and passata and stock and bring to the boil stirring ocassionally.
2) Once it starts to boil reduce the heat down and simmer for about 20 minutes.
3) remove from heat and using a hand blender blitz the soup and then pour the soup through a sieve into a new saucepan which will remove most lumps.
4) Return to heat and and server hot.
