Broccoli Soup

Cooking Ingredients:
350g Broccoli
1 Leek, sliced
1 Celery Stick, sliced
1 Garlic clove, crushed
350g potatos sliced
900ml vegetable stock
black pepper


Cooking Method:
1) Cut off the broccoli florets and set aside. Dice the stalks and put into a saucepan with leek, celery, potato and stock. Bring this to the boil and then simmer for 15 minutes.
2) Now add the florets and boil for 5 minutes or until potatos and stalks are soft.
3) Using a hand blender or food processor reduce this to a puree and return to the heat and season to taste with pepper and serve.
