Recipe: Turkey mince kebabs

 
Introduction:
Ingredients:

For the curry paste
1 chilli, de-seeded and finely chopped
˝ leek, finely chopped
3 garlic cloves, chopped
1 bunch coriander root, chopped
zest of 1 lime
1 tsp cumin
1 tsp fish sauce (nam pla)
For the turkey
125g/4˝oz turkey mince
1 tbsp olive oil
To serve
little gem lettuce, broken up
lime wedges

 

Cooking Tips:

Cooking Instructions:
1. To make the curry paste, blend together all of the paste ingredients in a food processor.
2. Add one tablespoon of the curry paste to the turkey mince and mix through thoroughly in a bowl. Divide the mixture into thirds and mould around three skewers.
3. Heat a grill pan and add the oil. Grill the skewers, turning occasionally for 8-10 minutes.
4. Serve on the baby gem lettuce with the lime wedges.
