Recipe: Pork Chops with peppers

 
Introduction:
Ingredients:
1 tbsp sunflower oil
4 pork chops, trimmed of visable fat
1 onion, chopped
1 green pepper, deseeded and sliced
1 red pepper, deseeded and sliced
325 g/111/2 oz canned sweetcorn kernals
1 tbsp chopped fresh parsley
salt and pepper
mashed paotato, to serve
 

Cooking Tips:

Cooking Instructions:
1) Heat the oil in a large, flameproof casserole. add the pork chop in batches and cook over a medium heat, turning occasionally for 5 minutes, or until browned. Transer the chops to a plate with a slotted spoon.

2) Add the chopped onion to the casserole and cook, stirring occasionally, for 5 minutes, or until softened. add the garlic and peppers and cook, stirring occasionally for a further 5 minutes. Stir in the sweetcorn kernals and their juices, the parsley and season to taste with salt and pepper.

3) Return the chops to the casserole, spooning the vegetable mixture over them. Cover and simmer for 30 minutes, or until tender. Serve immediatly with mashed patatoe.
