Creamy Chicken And Chive

 
A nicely poached chicken in a creamy chive and wine sauce, if you want to impress this is the way to go...
Cooking Tips:

Serves:4
Cook Time:15 mins
Cooking Ingredients:
4 boneless chicken breasts
125ml Dry White wine
300ml Chicken stock
1 Garlic Clove, chopped finely
175 Double cream
2 tbsp chopped chives
salt and pepper to season


Cooking Method:
1) Place chicken in a heavy based saucepan and cover with the white and stock, garlic, 1 tbsb chives so that it just covers the chicken and then bring up to a simmer for 8-10 minutes until the juices run when piered with a fork.
2) Remove chicken and transfer to a plate and keep warm. pour the sauce through a sieve and return to heat and pour in the double cream and add seasoning. Bring back up to a simmer and reduce the sauce by half to thicken and get improved flavour. Now add the last of the chives and continue to heat for a minute or so and pour over chicken.
