Breadcrumb Chicken With Chunky Chips

 
Once you cook this you wont buy frozen bredcrumb ckicken anymore. You will taste the difference.
Cooking Tips:
Be extra careful with the oil in the frying pan.

Cooking Ingredients:
4 Skinless ckicken breasts.
Plate of seasoned flour.
2 eggs beaten.
2 to 3 pieces of bread.
4 potatoes.
salt and peeper to season.


Cooking Method:
1) If you have one of those handy food processors put some bread in and turn it on until you achieve small breadcrumbs, pour this onto a plate. Beat 2 eggs in a bowl and pour some flour on another plate and season with some salt and pepper.
2) Place each piece of ckicken into some cling film and hit with rolling pin or wooden hammer to about 10mm thick.
3) Place each peice of chicken into the flour and get a covering, next put each one into the bowl and cover with beaten egg. Once done transfer to the plate of breadcrumbs and cover the ckicken with it. Once they are all done place in fridge for about 30 minutes just to firm up a bit. 4) Heat deep fat fryer to 170 degees. Meanwhile peel and slice into thick chips and and then put them into the hot fat for 7-8 minutes and then pull them out and turn it up to 190 degrees.
5) Fill a fying pan up with 20 mm of cooking oil and put onto the heat. The way i check to see if the oil is hot enough is to drop a small piece of bread into the oil and if it sizzles its ready.
Please be careful as this could be dangerous.
6) Now gently place each piece of chicken into the frying pan and cook each side for 6-7 minutes each side, bring them out and place on a piece of kitchen paper.
7) Put the chips back into the fryer and cook until nicely browned. once ready place them onto a piece of kitchen paper and together with the chicken, serve.
