Sticky toffee pudding

 
If you have a sweet tooth then is is an easy food recipe to follow. Once cooked this is a moist cake of most ingredients should be in your cupboard. Dates or figs are normally used, but on this occasion I used mixed fruit.
Cooking Tips:

Cooking Ingredients:
Cake:
150g Soft brown sugar
75g butter
150g self raising flour
hand full of dried mixed fruit
1 Egg
Sauce:
80g soft brown sugar
80g butter
160ml double cream


Cooking Method:
1) Place a hand full of mixed fruit in 100ml of water and leave for a few minutes
2) Mix both the butter and sugar until pale and creamy
3) Add 1 egg and continue mixing.
4) Fold in the self raising flour, drain the mixed fruit.
5) you can either blitz the raisens in a processor to a puree and fold this into the bowl or just add the mixed fruit. Once mixed set aside.
6) grease up four ramekins with some butter and then add then spoon the mixture into each one filling it 3/4 full.
7) cover each ramekin with some foil an d place into the oven at 180 degrees for 35 minutes.
8) Combine all sauce ingredients together in a saucepan and slowly bring to the boil and once the sauce goes slightly darker, turn of the heat and server over your toffee pudding.
